MC23.85 Junket Powder Junket powder is a commercial preparation of rennin, the milk-coagulating enzyme found in the stomachs of certain infant mammals. See also Rennet (MC23.9). When dissolved in water, junket powder forms a solution that acts like rennin to coagulate milk. However, it is considered more convenient because the powder has a longer shelf life than liquid rennet. Being a food additive, junket powder is considered quite safe to work with. In cooking, junket powder is used to make milk-based desserts. It will also function as a substitute for rennet in cheese-making, although it is not favoured for this purpose because it can confer flavours that are not considered suitable. |
